Pumpkin Spice Latte... the healthy way (DF/GF)

  • Organic coffee— 6-8 oz brewed, cold brew OR 2 shots of espresso

  • Unsweetened flax milk + protein or unsweetened coconut milk (1/2 C or use equal parts to amount of coffee used)

  • 3 Tbsp organic pumpkin, pureed—make your own or we like “Farmer’s Market” BPA free canned version

  • 1 tsp organic vanilla extract

  • 1/8 tsp organic Ceylon cinnamon (more if you love cinnamon!)

  • 1/2 tsp organic pumpkin spice (we like the “Simply Organic” version)

  • 2 tsp pure organic maple syrup – or sweetener of choice, omit if prefer unsweetened (still delish without!)

Combine milk and pumpkin puree in a medium sauce pan. Simmer on low for 1-minute. Add spices, simmer 1-2 additional minutes, longer if able to allow flavors to blend well, BUT avoid boiling.

Add to coffee or espresso and stir well. Enjoy!
