Egg Bites (GF)

When it comes to breakfast, we are constantly looking for 2 things - easy + healthy! And we realize these two seemingly simple things are HARD to come by on a regular.

We love this super simple, minimal ingredient, protein-packed, healthy recipe!

  • 6-8 organic, pastured eggs

  • 1 lb. ground sausage, browned (we love Butcher Box’s ground sausage!)

  • 1/2-1 C shredded cheese (we love “Drunken Goat”, goat cheese, or using a log of organic goat cheese)

  • 1/2 - 1 C organic red bell pepper, chopped

  • sea salt, to taste

  • pepper, to taste

Mix all ingredients into a large bowl. Adjust the amount of eggs, meat, cheese and veggies to meet the needs of your family. (These are also great to freeze for even easier breakfasts, in the future. Plan for a larger initial batch or make multiple batches, allow to cool fully before packaging for the freezer.)

Using a muffin pan, fill individual cups to ¾ full, bake at 350F for 15-20 minutes. Allow egg bites to cool slightly before serving. We also like to garnish with a side of fresh organic berries or a seasonal fruit of your choose. Enjoy!

Additional healthy ingredients to add: chopped organic veggies including onions, broccoli, spinach.
