Cheeseburger Casserole (GF)

  • 1lb ground bison or 100% grass-fed ground beef

  • 3 C organic potatoes, thinly sliced

  • 15 oz can organic cream of mushroom soup (sub for dairy-free option, as desired)

  • 3/4 C non-dairy milk, unsweetened (flax, coconut, or Ripple brand)

  • 1/2 C onion, finely chopped

  • 1/2 tsp sea salt

  • freshly ground pepper, to taste

  • 1 C organic shredded cheddar cheese (sub goat cheese, as desired)

Pre-heat overn to 350°F. Prepare your 9x12 casserole dish by coating with avocado or olive oil, ensuring coverage of all sides and bottom of dish.

Brown the ground meat, set aside. In a separate bowl, mix soup, milk, chopped onion, salt and pepper.

Spread layer of ground meat along the bottom of the baking dish as your first layer. Cover with a layer of the soup + milk mixture. Top with a single layer, side by side, of the thinly sliced potatoes. Repeat these three layers until you are out of ingredients.

Bake 30-45 minutes, or until potatoes are cooked thoroughly and the cheese mixture is bubbly. Serve with your favorite veggies and enjoy!
