Organic White Chicken Chili (GF/DF)

  • 2 lbs organic, boneless chicken breasts, baked + cubed       

  • 30 oz canned organic great northern beans, drained

  • 2 Tbsp avocado oil

  • 1 medium onion, chopped

  • 2 celery stalks, chopped

  • 2 cloves fresh garlic

  • 8 oz canned green chilies

  • 1 tsp sea salt

  • 2 Tbsp chili powder

  • 1/8 tsp clove spice

  • ¼ cayenne pepper (more or less depending on spicy preference)

  • 4 C organic chicken broth

  • 1 C frozen organic corn

    Additional Toppings:

  • avocados, sliced

  • goat cheese (we love “Drunken goat”)

  • Tofutti sour cream (non-dairy)

  • chopped organic cilantro

  • tortilla chips

Cook onions and celery in avocado oil + garlic and bake the chicken.

Add all ingredients into a crockpot, and cook on low for 4-6 hours. Serve topped with fresh avocado, cheese, sour cream, cilantro and/or tortilla chips - your choice!

Instead of baking chicken, a quick method is to use a large, organic rotisserie chicken.
