Easiest Ever Blueberry Cobbler (GF/DF/V)
2 C organic blueberries (or berry/fruit of your choice)
1 C GF all-purpose baking flour (we like Bob’s Red Mill)
1 C of sugar (we love Madhava organic, unrefined coconut sugar)
1 stick of organic butter or 1 C unrefined organic coconut oil, melted
1 ½ C non-dairy milk of choice (we love Good Karma Flax Milk)
Preheat oven to 350°F. Wash and dry berries. Spread evenly in the bottom of a 9 x 9 or 11 x 7" glass baking/casserole dish. Sprinkle berries with a little sugar, especially if berries are homegrown as they can be a little more tart.
Mix all other ingredients to form a cake-like batter. Pour the batter evenly over the berries. Bake for 25-minutes, or until the center is well set. For extra special occasions and summer holidays, we like to pair with a scoop of dairy free vanilla ice cream or non-dairy CocoWhip. Enjoy!
