Patty Melt Burgers (GF/DF)
2 lbs bison or grass-fed beef (remember, all bison is grass fed!)
Goat cheese (we love Whole Foods 365 sliced goat cheese, although it does contain a bit of cow’s milk enzymes—or soft goat cheese logs also work well!)
GF sandwich bread of your choice (Little Northern Bakehouse & Simple Kneads are favorites)
Avocado oil or unrefined coconut oil (remember to only buy glass jars of oils as the plastic containers will leak chemicals into the oil)
Divide ground meat into ¼ lbs sections and make into individual patties. Bake your patties on a cookie sheet at 350F x 10-15 mins, depending on how you prefer your meat cooked-- flipping patties ½ way through. Once the meat is cooked, place goat cheese on all still-warm burger patties fresh from the oven. This will begin the ooey-gooey “melt” part of your patty melts. Talk about delicious!
Add 2-4 tablespoons of avocado or coconut oil to a stove-top sauté pan. Briefly warm + toast bread in the gently heated oil. Add cheese to each bottom piece of sandwich bread, then top with one freshly baked burger patty + cheese, finish by topping with the 2nd piece of sandwich bread. Allow patty melt sandwiches to cook on low, for 3-5 minutes per side or until heated and after cheese is fully melted. Using a spatula, use heavy pressure to flatten patty melt sandwiches so the cheese, burger and bread simply melt into each other. Yum!
