Guest Post: Slow-Cooker Mexican Beef Stew (GF)
Also known as Estofado, we cannot get enough of this simple, healthy, delicious stew from our friend + colleague, Dr. Annissa & her daughter, of Simply So Healthy! This slow cooker stew is GF, DF, paleo, & keto-friendly…and is sure to delight your taste buds + warm your belly! We followed the recipe as written, using a fresh salsa verde (sugar free), our favorite organic red wine, but omitted the glucomannan. It was still beyond amazing - just not as thick as your traditional stew. We served over organic cauliflower rice (we like to use frozen for convenience!), topped with cilantro and watched our families gobble it up (the kiddos, too!). We prepped this in the morning (only 15-minutes!!) when the kids were at school and it was ready to eat by mid-afternoon. A wonderful option for a busy day, using common kitchen staples.
