Mushroom Broth

  • 7 C filtered water

  • 3/4 C onion, chopped

  • 3/4 C celery with tops, chopped

  • 1/2 C carrots, chopped

  • 1 Tbsp fresh ginger, chopped

  • 1 Tbsp apple cider vinegar

  • 1 tsp sea salt

  • 1 clove fresh garlic, chopped

  • 3.5 oz fresh shittake mushrooms (large pieces cut in half)

  • 0.75 oz dried oyster mushrooms

  • 0.5 oz dried maitake mushrooms

Place all ingredients in a slow cooker. Cook for 3.5-4 hrs on low, stirring 1/2 way through. Strain and reserve the broth.

Mushroom variety can be substituted depending on availability. We also like to use reishi, button, portobello, cremini, or chaga. Dried can be substituted for fresh. Each batch may taste a bit different depending on your combination, but all are delish!
