Avocado Chicken Salad (GF/DF)
1 1/2 - 2 medium avocados, mashed
2 C organic shredded chicken
1/2 C celery, chopped
1/2 C crumbled walnuts (pecans, slivered almonds)
1/2 C organic blueberries (organic grapes, halved)
1/4 tsp ground pepper
1/4 tsp sea salt
1/4 tsp turmeric powder
Mash the avocado in a small bowl, set aside. In a large bowl, combine shredded chicken, celery, walnuts, pepper, salt, turmeric powder. Add the mashed avocado - stir to combine. Add in the blueberries and gently fold in.
Enjoy over your favorite organic mixed greens, in a sandwich or wrap, with crackers (we love Simple Mills) or on its own!
