No Bake Energy Bites (GF/DF)

  • 1 1/4 C gluten free rolled oats

  • 1 1/2 to 2 Tbsp chia, flax or hemp seeds (it’s your choice!)

  • 1/2 C organic nut butter (almond, cashew, peanut or use sunflower seed butter to keep them nut-free)

  • 1/3 C honey

  • 1/2 tsp vanilla extract

  • 1/2 C other add-ins (cocoa nibs, raisins, chopped almonds, unsweetened dried coconut flakes, sunflower seeds, pumpkin seeds)

Place all of the chosen ingredients in a large mixing bowl and stir to combine. If the mixture seems too dry, add a bit more nut butter or if too wet add more oats until an appropriate, slightly sticky, consistency is achieved. Allow the mixture to rest in the refrigerator for 20-30 minutes - this will make formation easier.

Once chilled, portion enough mixture to make golf ball sized dough balls. Enjoy immediately or line a cookie sheet with parchment and place the balls on the cookie sheet to put back into the refrigerator to enjoy later. Eat within 1 week or freeze for later!
