Orange Nut Butter Bites (GF/DF)
1 1/4 C GF rolled oats
3/4 C pitted dates
3/4 C walnut pieces
1/3 C dried cherries (can also use dried cranberries, raisins)
1/4 C unsalted pistachios (can sub pumpkin or sunflower seeds)
3 Tbsp flaxseeds
1/4 tsp salt
1/2 tsp ground cinnamon
1/3 C unsalted nut butter (we prefer cashew or almond)
1/4 C raw honey
zest of 1 orange
1/3 C dark chocolate chips
Add paper muffin cup liners to a muffin pan and set aside.
In a food processor of high speed blender, add oats, dates and walnuts and pulse to break down into smaller pieces. Pulse in cherries, pistachios, flaxseed, salt, and cinnamon.
Add the nut butter, honey and zest. Blend until the mixture is sticky and combined well. If it seems too crumbly and dry, add a bit more honey. If desired, add in the chocolate chips and pulse briefly.
Divide the mixture evenly among the muffin cups and press down to ensure adhesion. Place the muffin pan in the freezer for 30-45 minutes to firm the mixture. Remove and serve or store in the refrigerator or freezer for later.
