Dirt Pudding (GF/DF)

  • 8oz pkg dairy free cream cheese (we prefer Kite Hill brand)

  • 1/4 C unrefined coconut oil, softened

  • 1 C confectioner’s sugar (or if you’re feeling super healthy + adventurous, sub for Paleo powdered sugar mix)

  • 3.5 C cold milk (Good Karma Flax or coconut milk preferred)

  • 2 boxes (3.5oz each) organic vanilla pudding powder mix (prefer European Gourmet Bakery organics version)

  • 2 cartons dairy free whipped topping, thawed (CocoWhip by So Delicious is tasty!)

  • 2 pkgs (15 oz each) gluten free chocolate vanilla cream sandwich cookies, crushed into crumbs (Glutino brand works great)

In a large bowl, beat cream cheese, coconut oil and sugar until smooth.

In a separate, large bowl, whisk milk, and pudding powder mixes for 3 minutes. Allow to set for 2-3 minutes. Gradually stir in cream cheese mixture. Fold in the whipped topping until well combined.

Spread a layer of crushed cookie crumbs in the bottom of an ungreased, 9-inch glass trifle bowl followed by a generous layer of the pudding mixture. Repeat for 3 full layers, topping with a final layer of cookie crumbs. Top with shaved dark chocolate, if desired. Refrigerate overnight before serving for enhanced flavor!
