No-Bake Chocolate Cookies (GF/DF)
½ C butter (or substitute coconut oil for DF version)
1 ½ C coconut sugar
1/3 C organic cacoa powder
½ C non-cow’s milk of choice (we love Good Karma Flax milk with protein)
1 tsp organic vanilla
2/3 C organic peanut butter
3 C quick cooking oats (we prefer One Degree’s Sprouted Quick Oats)
Bring sugar, milk, butter and cacoa to a boil in a medium saucepan over medium heat - stir occasionally. Then boil for 1-minute. Remove from heat. Add the oats, vanilla, and peanut butter - stir to combine.
Mixture should be sticky, but easy to form. Use a spoon to place the desired cookie size and gently place onto a parchment-lined cookie sheet. Let sit for 20-30 minutes to cool.
Place in the refrigerator for at least 1-2hrs to set. Enjoy!
Store any extra cookies in the refrigerator or freezer to maintain consistency.
