No-Bake Pumpkin Pie Protein Bites (GF/DF)
1 C dates, pitted
3/4 C organic pumpkin puree
1/2 C raw cashews, unsalted
1/2 C raw almonds, unsalted
2 Tbsp chia seeds
1 Tbsp ground flax seeds
2 Tbsp cacao powder (+ 1/4 C for dusting the bites)
1 tsp pumpkin pie spice
1/2 tsp vanilla extract
1 scoop *collagen powder
Combine all ingredients into a high powered blender. Pulse until the contents are broken down, but NOT smooth. It works best to keep a texture to the mixture for rolling into bite-sized portions.
Transfer the mixture to a bowl and refrigerate for at least 20-minutes to allow the mixture to chill + firm up for rolling. While refrigerating, add 1/4 C cacao powder to a medium, shallow bowl.
To roll the bites, we recommend using a spoon to grab a bite-sized amount. Set it in the bowl of cacao and roll a bit to get a little cacao stuck to the mixture. Finish by rolling into a ball with your hands and set aside. (The mixture can be a bit sticky if you choose not to roll in cacao before forming.)
Serve, refrigerate or freeze for later!
