Tomato Cucumber Salad (GF/DF/V)

  • 6-8 medium, organic tomatoes, diced

  • 2 organic cucumbers, diced

  • 1 medium onion, chopped

  • 1 C filtered water

  • 1/2 C white vinegar

  • 1/4 C avocado or olive oil

  • 1/8 C sugar (most recipes call for more - we find just a touch is enough to break the acidity without making this a sweet dish)

Combine the water, vinegar, oil, and sugar in a medium-sized bowl. Pour over the cut veggies in a large bowl. We like to let this marinate in the refrigerator for at least a few hours before serving - we actually like the flavor best after being refrigerated for 1-day.
