Tuna Salad Filled Tomato
1 large organic tomato (2-3 small roma tomatoes work well, too)
1 can wild caught tuna, in water
1/4 C mayo (click here for mayo options, including vegan)
1/4 tsp organic turmeric, ground
sea salt and pepper, to taste
organic chopped celery, to taste
Cut the top of the tomato off and scoop out the flesh. In a small bowl, mix together the drained tuna, mayo, turmeric, salt, pepper and celery. Stuff the tomato with the mixture and enjoy!
We love to serve this with a side of fresh, organic cucumbers and Siete chips for a bit of crunch.
