Oven Roasted Okra (GF/DF/V)
1 pound of okra
1/2 Tbsp avocado oil (olive oil works, too)
1/4 tsp sea salt
optional seasoning: fresh ground pepper, garlic powder, cayenne pepper, onion powder
Preheat oven to 450F. Rinse and dry the okra well, and cut away just the ends + tips. In a large bowl, coat the okra with the oil + salt and any other seasoning of choice.
Arrange the okra on a baking sheet ensuring it does not overlap. Roast for 20-25 minutes, rotating it at least twice during cooking. The okra should be slightly browned, but still tender. Serve while warm.
