Birthday "Smash" Cake (GF/DF)
2 organic eggs (fresh from backyard hens when possible!)
1 ripe banana
1 C unsweetened organic applesauce
1.5-2 C non-dairy milk of choice (Good Karma’s Flax+Omega3 + protein is our favorite)
1 tsp organic vanilla extract
1.5 C gluten free flour (Bob’s Red Mill or King Arthur 1:1 baking flours are favorites)
1 Tbsp organic Ceylon cinnamon
1/8 tsp fine Himalayan pink sea salt
1 tsp baking powder
1 tsp organic chia seeds, optional (for extra punch of fiber + protein)
1 tsp oil (coconut or avocado are favorites)
Preheat oven to 350°. Grease two 6” round baking pans with oil of choice. Set aside.
Mix all wet ingredients (from eggs through vanilla extract) in a blender. Once well-blended, add the flour - blend well again. If too thick, add additional milk or another 1/2 C applesauce.
Divide batter equally into each cake pan. Bake 20-25 minutes, or until cakes are firm in center.
Cake glaze: we like to keep it easy! On low blend together 1/2 C plain, unsweetened coconut milk yogurt + 1/2 C organic frozen berries (raspberries + strawberries for a pretty pink hue or blueberries for a beautiful blue or blackberries + blueberries with a touch or red berries for a lovely lavender!)
Optional sweetener: the above recipe may not seem sweet to a sweet-tooth loving adult or big kid and that’s okay! If you feel like you really want to splurge for your one-year-old birthday boy or girl, feel free to add 1-2 Tbsp organic maple syrup or unrefined coconut sugar. This will easily do the trick!
*For additional cake height, double the recipe for 2 more cake layers!
