Crispy, Crunchy Roasted Chickpeas (GF/DF/V)
15oz organic chickpeas
1/4-1/2 Tbsp organic EVOO (avocado oil works, too)
Sea salt, to taste
Favorite seasoning (pepper, garlic powder, curry powder, everything seasoning, etc.)
Preheat oven to 425°F. Drain + rinse the chickpeas and spread out on a towel to thoroughly dry. (If the chickpeas are wet while adding the oil they will not get crispy!)
Line a baking sheet with parchment and place chickpeas on the baking sheet in a single layer. Toss with just a drizzle of olive oil (we find 1/4-1/2 Tbsp is enough). Season with salt, to taste. Roast the chickpeas 20-25 minutes, until crispy and a light golden brown color. (Gently press a chickpea to make sure they are crispy enough - ovens vary!)
Remove and toss the chickpeas with desired seasoning(s) in a medium bowl while they’re still hot. Serve immediately for a delicious snack or put atop your salad for an extra crunch.
Best if consumed within 1-day. Store in a loosely covered container on the counter or in your pantry.
