Bratwurst Skillet with Veggies (GF)

  • 3 Tbsp avocado oil (sub oil of choice)

  • 1 pkg bratwurst, sliced into medallions (we use Greenfield Natural Meat Co. uncured smoked bratwurst sausage)

  • 4 oz organic goat cheese

  • 2-3 C organic broccoli, chopped

  • 1-2 C organic bell peppers, cut into strips

  • 1 C organic crushed tomatoes (canned works great!)

  • 2+ C organic bone or chicken broth

  • 2 C organic brown rice, cooked

Heat oil in a large skillet. Add sliced bratwurst medallions. Cook 2 minutes, then add broccoli and peppers. Add crushed tomatoes and broth, stirring often. Continue to simmer until bubbly, stirring often, about 15-20 minutes, or until broccoli and peppers are softened. Add goat cheese log. Stir until evenly mixed throughout. The brothy-sauce should be a pink-ish color. Spoon skillet mixture over cooked rice.

This recipe is super tasty! Some would describe it as shrimp ‘n’ grits married to jambalaya. We hope you enjoy it as much as our families do! Yum!
