Frozen Lemonade

  • 6-8 organic lemons

  • 1/2 C organic, raw honey

  • 3/4 C filtered water

  • 5 C ice

  • handful of fresh mint (optional)

  • sliced fruit for garnish (optional)

Juice the lemons into a bowl, or use a juicer (if using a juicer, fewer lemons are typically needed).

In a medium saucepan, warm the honey and lemon juice to a simmer. Turn off the heat and toss in mint, if desired and let sit for 10-minutes. Remove mint and discard or use for garnish in your drink.

In a blender, combine the lemon juice mixture with ice. Blend just until the ice is broken down, for a “slush” consistency. Serve immediately.

If so inclined, adults can enjoy this ‘spiked’ with vodka or gin for a refreshing summer cocktail.
