Pumpkin Spice Chia Pudding
1/2 C organic chia seeds
1 C organic coconut cream
4 Tbsp organic maple syrup
1/2 C organic pumpkin puree
2 tsp pumpkin spice
1 tsp organic vanilla extract
Mix all ingredients together well. Cover + refrigerate for 2 hours minimum, overnight is best!
Optional: add whipped topping of choice, extra sprinkle of cinnamon or cinnamon stick for garnish, and/or nuts and seeds for added crunch + protein. Enjoy!
